Baked Plantain with Skin

Ingredients

  • 1–2 overripe plantains (black skins, very soft)

Instructions

  1. Preheat oven to 175°C.
  2. Pierce plantain skins several times with a knife.
  3. Place whole plantains in a baking dish.
  4. Bake 45–50 minutes until very soft inside.
  5. Serve hot, scooping out the flesh.
