Baked Plantain with Skin

Ingredients
- 1–2 overripe plantains (black skins, very soft)
Instructions
- Preheat oven to 175°C.
- Pierce plantain skins several times with a knife.
- Place whole plantains in a baking dish.
- Bake 45–50 minutes until very soft inside.
- Serve hot, scooping out the flesh.
