Baked Plantain Without Skin

Ingredients

1–2 large ripe plantains (yellow with brown spots)

15 ml melted vegan butter or vegetable oil

Optional: strips of vegan cheese or smoky tempeh
Instructions

Preheat oven to 190°C.

Peel plantains, score lengthwise with a fork, and rub with melted vegan butter or oil.

Place in a baking dish and bake 45 minutes.

Turn plantains, bake another 10 minutes.

For variation, stuff with vegan cheese or tempeh in the last 5 minutes of baking.
