Baked Plantain Without Skin

Cook time: 55 minutes

Ingredients

  • 1–2 large ripe plantains (yellow with brown spots)

  • 15 ml melted vegan butter or vegetable oil

  • Optional: strips of vegan cheese or smoky tempeh

Instructions

  1. Preheat oven to 190°C.

  2. Peel plantains, score lengthwise with a fork, and rub with melted vegan butter or oil.

  3. Place in a baking dish and bake 45 minutes.

  4. Turn plantains, bake another 10 minutes.

  5. For variation, stuff with vegan cheese or tempeh in the last 5 minutes of baking.
