Caribbean Ginger Limeade
A spicy-sweet Caribbean refresher that combines zesty lime with warming ginger and spices.

Ingredients
- Juice of 6 limes (~240 ml)
- 30 ml cold water
- 15 g fresh ginger, sliced
- 5 cloves
- 1 tsp whole allspice
- 1.2 L boiling water
- 300 g sugar (adjust to taste)
Instructions
- Mix lime juice with cold water and let sit overnight.
- The next day, strain carefully to remove sediment.
- Simmer ginger, cloves, and allspice in boiling water for 20 minutes.
- Strain, add sugar, and stir until dissolved.
- Combine with lime juice, bring to a boil, then simmer 15 minutes.
- Strain again, cool, and bottle. Chill before serving.
