Chickpea Spread

A protein-rich spread that makes a great alternative to hummus. Works wonderfully on bread or as a dip for veggies.

Yield: ~1 L spread
Prep time: 10 minutes + soaking
Cook time: 1 hour

Ingredients

  • 200 g dried chickpeas
  • 1 L vegetable stock
  • 30 g nutritional yeast (instead of Parmesan)
  • 2 garlic cloves, minced
  • 15 ml soy sauce

Instructions

  1. Soak chickpeas overnight in water.
  2. Drain and cook chickpeas in stock for 1 hour until soft.
  3. Blend chickpeas with 250–350 ml of stock until smooth.
  4. Mix in nutritional yeast, garlic, and soy sauce to taste.
  5. Serve as a spread or dip.
