Plantains with Pineapple

Ingredients
- 3 very ripe plantains (black skins), peeled and sliced into 1 cm rounds
- 1 kg canned pineapple chunks or tidbits, packed in juice
- 30 g vegan butter or coconut oil
Instructions
- Preheat oven to 175°C.
- In a baking dish, layer plantain slices and pineapple, starting with plantains and ending with pineapple.
- Dot with vegan butter or coconut oil.
- Cover with foil and bake until bubbling and golden on the edges, about 45 minutes.
- Remove foil and let cool slightly before serving.
