Plantains with Pineapple

Ingredients

  • 3 very ripe plantains (black skins), peeled and sliced into 1 cm rounds
  • 1 kg canned pineapple chunks or tidbits, packed in juice
  • 30 g vegan butter or coconut oil

Instructions

  1. Preheat oven to 175°C.
  2. In a baking dish, layer plantain slices and pineapple, starting with plantains and ending with pineapple.
  3. Dot with vegan butter or coconut oil.
  4. Cover with foil and bake until bubbling and golden on the edges, about 45 minutes.
  5. Remove foil and let cool slightly before serving.
