Spicy Haitian Fritters (Acras)

A Caribbean street food snack made with beans and grated root vegetables, spiced and fried until golden.

Yield: 15–20 fritters
Prep time: 20 minutes + soaking
Cook time: 10 minutes

Ingredients

  • 200 g dried beans (kidney, lima, or chickpeas)
  • 300 g malanga root (or taro), peeled and grated
  • 1 bunch parsley, chopped
  • 1 hot chili, minced
  • 15 ml lemon juice
  • Salt & pepper, to taste
  • Oil, for frying

Instructions

  1. Soak beans overnight. Remove skins if possible.
  2. Grind beans into a paste (or blend with a little water).
  3. Stir in grated malanga root until well mixed.
  4. Season with chili, parsley, lemon juice, salt, and pepper.
  5. Heat oil in a pan and drop spoonfuls of batter into hot oil.
  6. Fry until golden brown, turning once. Drain on paper towels.
  7. Serve hot as a snack or appetizer.
