Spicy Haitian Fritters (Acras)
A Caribbean street food snack made with beans and grated root vegetables, spiced and fried until golden.
Yield: 15–20 fritters
Prep time: 20 minutes + soaking
Cook time: 10 minutes
Ingredients
- 200 g dried beans (kidney, lima, or chickpeas)
- 300 g malanga root (or taro), peeled and grated
- 1 bunch parsley, chopped
- 1 hot chili, minced
- 15 ml lemon juice
- Salt & pepper, to taste
- Oil, for frying
Instructions
- Soak beans overnight. Remove skins if possible.
- Grind beans into a paste (or blend with a little water).
- Stir in grated malanga root until well mixed.
- Season with chili, parsley, lemon juice, salt, and pepper.
- Heat oil in a pan and drop spoonfuls of batter into hot oil.
- Fry until golden brown, turning once. Drain on paper towels.
- Serve hot as a snack or appetizer.
