Split Pea Soup (Caribbean Style)

Ingredients
- 200 g yellow split peas
- 1.5 L water
- 1 potato, grated
- 75 g carrots, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp hot pepper sauce (or chili flakes)
- Salt & pepper, to taste
- 1 bundle of mixed fresh herbs (thyme, parsley, celery leaves, bay leaf), tied with string
Instructions
- Cook split peas in water for 2.5–3 hours until tender.
- Add potato, carrots, onions, garlic, and seasonings. Simmer 20 minutes.
- Remove herb bundle before serving.
- Serve hot with bread or plantains.
