Strawberry Sorbet

Freeze time: ~3 hours

Ingredients

  • 450 g frozen unsweetened strawberries

  • 45 ml unsweetened frozen apple juice concentrate

  • 160 g plain vegan yogurt

  • 30 g soy milk powder (or oat milk powder)

Instructions

  1. Place about a quarter of the strawberries into a blender, chop, then purée. Repeat with the next quarter, until all are blended.

  2. Add apple juice concentrate, then blend again until smooth.

  3. Add vegan yogurt and soy milk powder. Blend until creamy.

  4. Pour mixture into a shallow 28x18 cm glass dish, cover, and freeze until nearly firm.

  5. Return to blender and process until smooth and creamy.

  6. Spoon into 6 dessert dishes, cover, and freeze again. Remove from freezer 15 minutes before serving.
