Aruba Sunshine Punch
A bright, fruity punch designed to serve a large gathering. Best served ice-cold with plenty of fresh citrus floating on top.
Yield: ~75 servings
Prep time: 20 minutes + chilling time
Ingredients
- 2.8 L unsweetened pineapple juice
- 240 ml lemon juice
- 840 ml orange juice
- 60 ml lime juice
- 500 g strawberries, sliced (or jar of cherries)
- 500 g sugar
- 240 ml fresh mint leaves
- 1.5 L sparkling water (or ginger ale)
- Lemon & lime slices, for garnish
Instructions
- Mix pineapple, lemon, orange, lime juices, sugar, and mint leaves in a large bowl.
- Chill for several hours, then strain.
- Pour over a large block of ice in a punch bowl.
- Add sparkling water carefully, then top with strawberries and floating citrus slices.
