Caribbean Ginger Limeade

A spicy-sweet Caribbean refresher that combines zesty lime with warming ginger and spices.

Ingredients

  • Juice of 6 limes (~240 ml)
  • 30 ml cold water
  • 15 g fresh ginger, sliced
  • 5 cloves
  • 1 tsp whole allspice
  • 1.2 L boiling water
  • 300 g sugar (adjust to taste)

Instructions

  1. Mix lime juice with cold water and let sit overnight.
  2. The next day, strain carefully to remove sediment.
  3. Simmer ginger, cloves, and allspice in boiling water for 20 minutes.
  4. Strain, add sugar, and stir until dissolved.
  5. Combine with lime juice, bring to a boil, then simmer 15 minutes.
  6. Strain again, cool, and bottle. Chill before serving.
