Chickpea Spread
A protein-rich spread that makes a great alternative to hummus. Works wonderfully on bread or as a dip for veggies.
Yield: ~1 L spread
Prep time: 10 minutes + soaking
Cook time: 1 hour
Ingredients
- 200 g dried chickpeas
- 1 L vegetable stock
- 30 g nutritional yeast (instead of Parmesan)
- 2 garlic cloves, minced
- 15 ml soy sauce
Instructions
- Soak chickpeas overnight in water.
- Drain and cook chickpeas in stock for 1 hour until soft.
- Blend chickpeas with 250–350 ml of stock until smooth.
- Mix in nutritional yeast, garlic, and soy sauce to taste.
- Serve as a spread or dip.
