Fried Plantain Soup

Yield: 6 servings
Prep time: 15 minutes
Cook time: 3 hours (stock) + 10 minutes (frying)

Ingredients

  • 2 litres vegetable broth
  • 1 large green plantain, peeled and sliced into 2.5 cm rounds
  • 30 ml olive or peanut oil
  • Fresh coriander leaves, chopped
  • Nutritional yeast (optional, for garnish)

Instructions

  1. Prepare a rich vegetable stock using onions, parsley, garlic, and seasoning. Keep warm.
  2. Fry plantain slices in hot oil until golden on both sides. Remove and flatten slightly with a pestle or spatula.
  3. Return plantains to hot oil, fry 1 minute more per side until crispy.
  4. Add fried plantains to hot stock, sprinkle with fresh coriander, and top with nutritional yeast if desired.
  5. Serve hot.
