Pan-Fried Zucchini

Ingredients

  • 500 g zucchini, sliced thin
  • 75 ml extra virgin olive oil
  • Salt, to taste
  • Black pepper (optional)

Instructions

  1. Wash zucchini and slice thinly.
  2. Heat olive oil in a frying pan over medium-high heat.
  3. Add zucchini slices and salt. Cook on high heat, stirring often so the zucchini doesn’t burn.
  4. Continue cooking for about 15 minutes, until tender and lightly golden.
  5. Season with pepper if desired and serve hot.
