Pan-Fried Zucchini

Ingredients
- 500 g zucchini, sliced thin
- 75 ml extra virgin olive oil
- Salt, to taste
- Black pepper (optional)
Instructions
- Wash zucchini and slice thinly.
- Heat olive oil in a frying pan over medium-high heat.
- Add zucchini slices and salt. Cook on high heat, stirring often so the zucchini doesn’t burn.
- Continue cooking for about 15 minutes, until tender and lightly golden.
- Season with pepper if desired and serve hot.
