Split Pea Soup (Caribbean Style)

Ingredients

  • 200 g yellow split peas
  • 1.5 L water
  • 1 potato, grated
  • 75 g carrots, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp hot pepper sauce (or chili flakes)
  • Salt & pepper, to taste
  • 1 bundle of mixed fresh herbs (thyme, parsley, celery leaves, bay leaf), tied with string

Instructions

  1. Cook split peas in water for 2.5–3 hours until tender.
  2. Add potato, carrots, onions, garlic, and seasonings. Simmer 20 minutes.
  3. Remove herb bundle before serving.
  4. Serve hot with bread or plantains.
