Tahini Dip (Chickpea & Sesame)
A creamy, nutty dip similar to hummus, rich in protein and healthy fats. Great with bread, pita, or fresh veggies.

Cook time: 1½ hours
Ingredients
- 200 g dried chickpeas
- ½ tsp baking soda
- 2 tsp salt
- 6 garlic cloves, crushed
- 180 ml lemon juice
- 120 g tahini paste
- 1 tbsp olive oil (for garnish)
- 1 pinch ground cumin
- Fresh parsley, chopped
Instructions
- Soak chickpeas overnight in water with baking soda. Remove any floating beans.
- Drain, cover with fresh water, and bring to a boil. Skim foam, reduce heat, and simmer 1½ hours until tender.
- Drain and purée chickpeas in a blender.
- Crush garlic with salt, then whisk in lemon juice and tahini.
- Mix with chickpea purée until smooth.
- Spoon into small plates, drizzle with olive oil, and garnish with cumin and parsley.
