Tangy Mustard Cauliflower

Ingredients
- 1 medium cauliflower, whole head
- 120 g vegan mayo
- 15 g vegan butter or margarine
- 5 g minced onion (or ½ tbsp fresh onion, finely chopped)
- 5 ml mustard (prepared)
- 60 g shredded vegan cheddar cheese
Instructions
- Place cauliflower in a microwave-safe casserole dish. Add 30 ml water, cover, and cook 7–8 minutes until just tender.
- Mix vegan mayo, onion, and mustard.
- Place cauliflower on a serving plate. Spread mayo mixture over the top and halfway down the sides.
- Sprinkle with vegan cheese. Microwave uncovered for 1 minute until topping is warm and melted.
