Aruba Sunshine Punch

A bright, fruity punch designed to serve a large gathering. Best served ice-cold with plenty of fresh citrus floating on top.

Yield: ~75 servings
Prep time: 20 minutes + chilling time

Ingredients

  • 2.8 L unsweetened pineapple juice
  • 240 ml lemon juice
  • 840 ml orange juice
  • 60 ml lime juice
  • 500 g strawberries, sliced (or jar of cherries)
  • 500 g sugar
  • 240 ml fresh mint leaves
  • 1.5 L sparkling water (or ginger ale)
  • Lemon & lime slices, for garnish

Instructions

  1. Mix pineapple, lemon, orange, lime juices, sugar, and mint leaves in a large bowl.
  2. Chill for several hours, then strain.
  3. Pour over a large block of ice in a punch bowl.
  4. Add sparkling water carefully, then top with strawberries and floating citrus slices.
