Claude's Baked Bananas

Ingredients

  • 6 bananas, peeled and halved lengthwise
  • 70 g brown sugar
  • 120 ml strong brewed coffee
  • 120 ml coffee liqueur 
  • Coconut cream, for serving

Instructions

  1. Preheat oven to 120°C.
  2. Arrange bananas in a shallow baking dish, sprinkle with brown sugar.
  3. Mix coffee and coffee liqueur, pour over bananas.
  4. Bake uncovered for 2 hours until soft and caramelised.
  5. Serve warm with a spoonful of coconut cream.
