Mexican Mango Dessert

Ingredients

  • 3 ripe mangoes, peeled and pitted

  • 400 g sweetened condensed oat milk

  • Juice of 1 lemon (~50 ml)

  • 120 g raspberries (fresh or thawed frozen)

  • 60 ml orange juice

  • 4 tbsp chopped pistachios

Instructions

  1. Marinate raspberries in orange juice. If using frozen, thaw and drain first.

  2. Blend mangoes, vegan condensed milk, and lemon juice until smooth.

  3. Divide half of mixture between 4 dessert dishes.

  4. Add most of the raspberries on top, then cover with remaining mango mixture.

  5. Chill for several hours.

  6. Just before serving, top with remaining raspberries and garnish with pistachios.
