Tangy Mustard Cauliflower

Ingredients

  • 1 medium cauliflower, whole head
  • 120 g vegan mayo
  • 15 g vegan butter or margarine
  • 5 g minced onion (or ½ tbsp fresh onion, finely chopped)
  • 5 ml mustard (prepared)
  • 60 g shredded vegan cheddar cheese

Instructions

  1. Place cauliflower in a microwave-safe casserole dish. Add 30 ml water, cover, and cook 7–8 minutes until just tender.
  2. Mix vegan mayo, onion, and mustard.
  3. Place cauliflower on a serving plate. Spread mayo mixture over the top and halfway down the sides.
  4. Sprinkle with vegan cheese. Microwave uncovered for 1 minute until topping is warm and melted.
